Vegetable Mexican Lasagne

Mexican Lasagne! This recipe is an absolute favourite, a lasagne you can have for lunch or dinner is beautiful with a salad or on its own, can even eat cold! a really mild Mexican taste, can amp it up a little by adding more spices, eg garlic, chilli etc.  Can be made the night before or day off eating. 

Ingredients:

  1. 1 x large bunch of silverbeet or spinach ( boxed frozen 2 pkts) 
  2. 1 x can Mexican or Italian tomatoes
  3. 1 x can chilli beans
  4. 1 x pottle sour cream
  5. 1/2 onion
  6. 1x pkt lasagne or lasagne sheets (pre cooked)
  7. 1 Cup cheese grated

Method:

Cook silverbeet then leave to drain thoroughly. Cook tomatoes, chilli beans, onion and garlic. May need to be thickened slightly if too runny. When silverbeet has drained, add sour cream and grated cheese. Get large sized dish then add in layers, silverbeet, lasagne and tomatoes, repeat layering. 

Top with grated cheese. Cook in oven for about 20 mins 150-200 deg c

Can be frozen. Enjoy x
