Making a hearty pumpkin soup recipe with all the gorgeous fragrance coming through the home, is such a welcome! and knowing it is so easy to makeup, and is super quick & perfect with some hot crunchy bread rolls.
Ingredients:
Pumpkin, depending on how much you are going to make is how much pumpkin you use, lets use a whole pumpkin for this recipe.
1 x potato
1 x large onion
4 teaspoons chicken stock or vegetable stock
dash of curry powder
2 x teaspoons of garlic crushed
salt and petter
Method:
Chop everything up, just cover with water, bring to boil then simmer, till cooked.
Pop in blender once cooled, then add cream or sour cream.
Freezes well, can pop in snap lock bags in meal sizes
Variation for a little bit of extra spice:
- 1 x teaspoon cumin
- 1 x teaspoon coriander
- 2 x tablespoons garam masala
- 2 x teaspoons crushed ginger
- 2 x cloves garlic
- 3/4 cup coconut milk
